  • 1/4 cup Olive Oil
  • 1/4 cup Fresh Lemon Juice

  • 2 cloves Garlic, minced
  • 1 tsp Dried Oregano
  • Salt and Pepper
  • 4 cups Cooked Quinoa or Rice
  • 1 large Cucumber, diced
  • 1 pint Tomatoes, halved
  • 1/2 cup Red Onion, sliced
  • 1/2 cup Crumbled Feta Cheese
  • 1/4 cup Kalamata Olives, halved

Instructions

  1. In a mixing bowl, combine olive oil, lemon juice, dill, minced garlic, oregano, salt, and pepper to create the marinade.
  2. Add cubed chicken to the marinade; toss until evenly coated. Let marinate for at least 30 minutes (up to 4 hours).
  3. Cook the chicken by either baking at 400°F for 18–20 minutes or grilling over medium heat for about 4–5 minutes per side until fully cooked.
  4. Assemble bowls by placing quinoa or rice in each bowl, topping with diced cucumber, halved tomatoes, sliced red onion, cooked chicken, crumbled feta cheese, and Kalamata olives. Drizzle with extra olive oil or lemon juice if desired.
