Ingredients

- 1 cup glutinous rice flour (mochiko)

- 1 cup water

Instructions
- Boil water in a medium pot. Cut a small cross at the bottom of the peaches, then cook for one minute. Transfer to cold water to cool, peel, and halve.
- In a microwave-safe bowl, whisk together glutinous rice flour and sugar. Gradually add water until smooth. Cover with a wet paper towel and microwave for 1 minute; stir and repeat two more times until thick.
- Dust your work surface with cornstarch, roll out the mochi dough into circles about 1/6-inch thick, and divide into four portions.
- Place each peach half in the center of the dough, fold sides over to enclose completely, dust with cornstarch, and set seam-side down.
