- 1 1/2 cups graham cracker crumbs
- 1/4 cup dark brown sugar
- 5 Tbsp butter (melted)
- 1 tsp vanilla
- 4.4 oz white chocolate bar (goes on top of pressed crust)
- 24 oz cream cheese (softened)
- 3/4 cup heavy whipping cream
- 2 tbsp plain yogurt
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 Tbsp corn starch
- 1/2 cup white granulated sugar
- 6 oz raspberries
- 3/4 cup white granulated sugar
- 1 Tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 Tbsp cornstarch (mixed with a splash of cold water)
- 4 oz white chocolate (bar or melts) (melted)
Instructions
- 1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs, dark brown sugar, melted butter, and vanilla in a bowl; press into a springform pan. Melt white chocolate and pour over the crust.
- 2. For the raspberry swirl, cook raspberries with sugar, lemon juice, and cornstarch until saucy; let cool.
- 3. Beat cream cheese until smooth; add remaining filling ingredients and mix until combined.
- 4. Pour half the filling over the crust; drizzle raspberry sauce and swirl. Add remaining filling and more raspberry sauce; create swirls again.
- 5. Bake for about 85 minutes until set but slightly jiggly in the center. Cool gradually in the oven with door ajar before refrigerating for four hours.
