  • 5 Tbsp butter (melted)
  • 1 tsp vanilla
  • 4.4 oz white chocolate bar (goes on top of pressed crust)
  • 24 oz cream cheese (softened)
  • 3/4 cup heavy whipping cream
  • 2 tbsp plain yogurt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 Tbsp corn starch
  • 1/2 cup white granulated sugar
  • 6 oz raspberries
  • 3/4 cup white granulated sugar
  • 1 Tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 Tbsp cornstarch (mixed with a splash of cold water)
  • 4 oz white chocolate (bar or melts) (melted)

Instructions

  1. 1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs, dark brown sugar, melted butter, and vanilla in a bowl; press into a springform pan. Melt white chocolate and pour over the crust.
  2. 2. For the raspberry swirl, cook raspberries with sugar, lemon juice, and cornstarch until saucy; let cool.
  3. 3. Beat cream cheese until smooth; add remaining filling ingredients and mix until combined.
  4. 4. Pour half the filling over the crust; drizzle raspberry sauce and swirl. Add remaining filling and more raspberry sauce; create swirls again.
  5. 5. Bake for about 85 minutes until set but slightly jiggly in the center. Cool gradually in the oven with door ajar before refrigerating for four hours.
