  • 480ml dairy-free milk (soy recommended)
  • 2 teaspoons apple cider vinegar
  • 420g self-raising flour
  • 300g caster sugar
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 120ml sunflower oil
  • 1 teaspoon vanilla extract
  • 80g mango puree
  • 300g dairy-free butter (for frosting)
  • 500g powdered / icing sugar
  • 6 tablespoons mango puree (plus extra for drizzling)
  • 400g desiccated coconut (for decoration)
  • Rosemary sprigs (optional decoration)
  • 1 ripe mango (cut into cubes for decoration)

Instructions

  1. Preheat the oven to 180°C (350°F) and prepare two greased 8-inch round cake pans.
  2. In one bowl, mix dairy-free milk, apple cider vinegar, sunflower oil, vanilla extract, and mango puree until combined.
  3. In another bowl, whisk together self-raising flour, caster sugar, baking powder, and bicarbonate of soda.
  4. Gradually add dry ingredients to wet ingredients; mix gently until just combined.
  5. Divide batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to a cooling rack.
  7. For the frosting, beat together dairy-free butter, powdered sugar, and mango puree until fluffy.
  8. Assemble the cake by layering frosting between the cooled cakes and coating the outside with more frosting and desiccated coconut.
