  • 1 medium cucumber, grated
  • 1 cup Greek yogurt (plain)

Instructions

  1. If using rotisserie chicken, skip cooking; otherwise, preheat oven to 375°F (190°C). Season and bake chicken breasts for 25-30 minutes until cooked. Shred once cooled.
  2. Grate the cucumber and squeeze out excess moisture. In a mixing bowl, combine the cucumber with Greek yogurt, dill, lemon juice, garlic, salt, and pepper; mix well.
  3. In a large bowl, add shredded chicken and pour tzatziki sauce over it. Gently fold in diced red onion until everything is coated.
  4. Cover and chill for at least 30 minutes before serving to enhance flavors.
