Ingredients
- 1 tbsp butter
- 1 tbsp olive oil
- 4 salmon fillets
- 2 cloves garlic
- 3–4 sun-dried tomatoes (sliced)
- 125ml dry white wine
- 250ml double cream
- 50g grated Parmesan cheese
- 30g fresh spinach
Instructions
- Pat the salmon dry, season with salt and pepper. Heat olive oil and butter in a pan over medium-high heat, then sear salmon skin-side up until golden brown (about 6-7 minutes). Remove from pan.
- In the same pan, sauté minced garlic and sun-dried tomatoes over low heat for about 30 seconds. Deglaze with white wine and simmer until reduced by half.
- Stir in double cream and Parmesan cheese until combined; add fresh spinach until wilted. Return salmon to the pan, simmer on low for another 5 minutes. Adjust seasoning if necessary before serving.
