Ingredients

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 4 salmon fillets
  • 2 cloves garlic
  • 34 sun-dried tomatoes (sliced)
  • 125ml dry white wine
  • 250ml double cream
  • 50g grated Parmesan cheese
  • 30g fresh spinach

Instructions

  1. Pat the salmon dry, season with salt and pepper. Heat olive oil and butter in a pan over medium-high heat, then sear salmon skin-side up until golden brown (about 6-7 minutes). Remove from pan.
  2. In the same pan, sauté minced garlic and sun-dried tomatoes over low heat for about 30 seconds. Deglaze with white wine and simmer until reduced by half.
  3. Stir in double cream and Parmesan cheese until combined; add fresh spinach until wilted. Return salmon to the pan, simmer on low for another 5 minutes. Adjust seasoning if necessary before serving.
