  • 2.5 lb pork loin roast
  • 1.5 lbs sauerkraut
  • 1/4 cup brown sugar
  • 1.5 cups apple slices
  • 1 bag wide egg noodles
  • 2 tbsp unsalted butter
  • Salt and black pepper to taste

Instructions

  1. Gather all ingredients and bring the pork roast to room temperature.
  2. In a heavy-bottomed pot, heat high-heat oil over medium-high heat. Season the pork with salt and pepper, then sear on all sides until browned.
  3. Remove the pork, sauté diced onion until translucent, then add minced garlic.
  4. Return the pork to the pot; mix in sauerkraut, chicken soup base, brown sugar, apple slices, water, and additional seasoning. Bring to a simmer.
  5. Cover and cook on low for about 90 minutes until the pork is tender.
  6. Cook wide egg noodles according to package instructions in salted water.
  7. Drain noodles, mix with butter until melted, then serve topped with the pork sauerkraut mixture.
