- 1 pound large mushrooms (Cremini or Portobello)
- 1 cup cooked chicken, diced
- 5 ounces fresh spinach, chopped
- 4 ounces cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1/2 medium yellow onion, chopped
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms and remove stems; chop the stems finely.
- In a skillet, heat olive oil and sauté onions until soft. Add garlic and chopped mushroom stems; cook until browned.
- Stir in spinach until wilted, then transfer to a bowl and mix with cream cheese.
- Add diced chicken, Parmesan, mozzarella, breadcrumbs, salt, and pepper; combine well.
- Fill each mushroom cap with the mixture and arrange on a baking sheet.
- Top with additional breadcrumbs and drizzle with olive oil.
- Bake for 20-25 minutes until mushrooms are tender and tops are golden brown.
