  • 2 cups water
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon sesame oil
  • 1 pound sushi-grade ahi tuna (finely chopped)
  • 3 tablespoons Japanese kewpie mayonnaise
  • 2 tablespoons Sriracha
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 12 teaspoons lime juice (to taste)
  • Avocado (thinly sliced)
  • Toasted sesame seeds
  • Chives or scallions (minced)
  • Jalapeño or serrano pepper (sliced)

Instructions

  1. Rinse the sushi rice until the water runs clear. Cook with water and salt according to instructions; let cool slightly.
  2. Mix cooked rice with vinegar, sugar, and sesame oil.
  3. Combine chopped ahi tuna with kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice in a bowl.
  4. Shape cooled rice into rectangles and fry in a pan until golden brown on both sides.
  5. Top each crispy rice piece with spicy tuna mixture and garnish with avocado slices, sesame seeds, chives, and jalapeños.
