- 3 pounds beef chuck roast (cut into cubes)

- 2 cans fire-roasted diced tomatoes (14.5 ounces each)
- 1 can tomato sauce (8 ounces)
- 2 cups beef broth
- 3 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 2 tablespoons masa harina or cornmeal (for thickening)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear the beef cubes until browned on all sides. Transfer to the slow cooker.
- In the slow cooker, combine cooked beef with diced onion, tomato paste, fire-roasted tomatoes, tomato sauce, beef broth, and spices. Mix well.
- Cover and cook on low for 7-8 hours or high for 3-4 hours. About 30 minutes before serving, stir in masa harina or cornmeal to thicken.
