- 1 lb large raw shrimp (peeled and deveined)
- 2 avocados (peeled, pitted, and sliced)
- 1/2 lb Roma tomatoes (chopped)
- 1/2 English cucumber (sliced)
- 1/2 medium red onion (thinly sliced)
- 1 cup corn kernels
- 1 medium romaine lettuce (chopped)
- 3 Tbsp olive oil
- Juice of 1 large lemon
- 1/2 bunch cilantro (chopped)
Instructions
- In a medium bowl, marinate shrimp with cajun spice, garlic, and salt.
- Heat a large non-stick pan over medium-high heat and melt unsalted butter. Cook shrimp for about 3 minutes until opaque.
- Assemble the salad by lining a large platter with romaine lettuce and layering on shrimp, avocado, tomatoes, cucumber, red onion, and corn.
- In a small bowl, whisk together olive oil, lemon juice, chopped cilantro, salt, and pepper. Drizzle over the salad before serving.
