Ingredients

  • 1 cup corn kernels
  • 1 medium romaine lettuce (chopped)
  • 3 Tbsp olive oil

  • 1/2 bunch cilantro (chopped)

Instructions

  1. In a medium bowl, marinate shrimp with cajun spice, garlic, and salt.
  2. Heat a large non-stick pan over medium-high heat and melt unsalted butter. Cook shrimp for about 3 minutes until opaque.
  3. Assemble the salad by lining a large platter with romaine lettuce and layering on shrimp, avocado, tomatoes, cucumber, red onion, and corn.
