- 4 large russet potatoes
- 1 pound ground beef or lamb
- 1 small onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- ¾ cup frozen peas
- ½ cup milk
- ½ cup shredded cheddar cheese (optional)
- 1 tablespoon olive oil
- ½ teaspoon salt
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- Salt & black pepper, to taste
- 2 tablespoons butter
- ¼ teaspoon garlic powder
Instructions
- Preheat oven to 400°F (200°C).
- Scrub the potatoes, prick them with a fork, rub with olive oil and salt, and bake for 45-50 minutes until tender.
- In a skillet, cook ground meat until browned. Add onions, carrots, and garlic; sauté for about 5 minutes.
- Mix in tomato paste, Worcestershire sauce, herbs, seasonings, and beef broth; let simmer until thickened.
- Slice the tops off the baked potatoes and scoop out some flesh into a bowl. Mash with milk and butter.
- Fill potato skins with the meat mixture, top with mashed potatoes and cheese if desired.
- Bake again for 10-15 minutes until tops are golden brown.
