  • 4 large russet potatoes
  • 1 pound ground beef or lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • ¾ cup frozen peas
  • ½ cup milk
  • ½ cup shredded cheddar cheese (optional)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt & black pepper, to taste
  • 2 tablespoons butter
  • ¼ teaspoon garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub the potatoes, prick them with a fork, rub with olive oil and salt, and bake for 45-50 minutes until tender.
  3. In a skillet, cook ground meat until browned. Add onions, carrots, and garlic; sauté for about 5 minutes.
  4. Mix in tomato paste, Worcestershire sauce, herbs, seasonings, and beef broth; let simmer until thickened.
  5. Slice the tops off the baked potatoes and scoop out some flesh into a bowl. Mash with milk and butter.
  6. Fill potato skins with the meat mixture, top with mashed potatoes and cheese if desired.
  7. Bake again for 10-15 minutes until tops are golden brown.
