  • 4 cups day-old cooked jasmine rice
  • 12 oz medium shrimp, peeled & deveined
  • 6 oz crab meat (fresh or imitation)
  • 2 large eggs, beaten
  • ½ cup finely diced carrots
  • ½ cup green peas
  • ½ cup diced red bell pepper
  • ¼ cup chopped green onions
  • ½ cup finely chopped onion
  • 3 cloves garlic, minced
  • 1 tbsp minced fresh ginger
  • Soy sauce, oyster sauce, sesame oil, and vegetable oil for cooking

Instructions

  1. Marinate the shrimp and crab in a mixture of soy sauce, sesame oil, garlic, ginger, lemon juice, and white pepper for 10–15 minutes.
  2. Chop all vegetables into small pieces for even cooking.
  3. Heat a wok over high heat until slightly smoking; add vegetable oil.
  4. Stir-fry the marinated seafood for about 2–3 minutes until shrimp turn pink; set aside.
  5. Add garlic, ginger, and onions to the wok; cook until fragrant.
  6. Incorporate carrots, peas, and bell peppers; stir-fry until tender-crisp.
  7. Push veggies aside and scramble the eggs in the wok until soft curds form; mix everything together.
  8. Add cold rice to the wok; break apart clumps while stirring vigorously to mix with eggs and veggies.
  9. Pour in soy sauce, oyster sauce, sesame oil; season with salt and pepper to taste.
  10. Return the seafood to the wok; toss everything for another minute on high heat before serving.
