- 2 cups butternut squash, peeled and diced
- 1 pound sirloin or ribeye steak, cut into cubes
- 1 cup quinoa, rinsed
- 3 garlic cloves, sautéed
- 1/2 cup heavy cream or Greek yogurt
- Fresh herbs: parsley, thyme, rosemary
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, pepper, thyme, and rosemary; roast for 25–30 minutes until tender.
- In a medium saucepan, boil 2 cups water; add rinsed quinoa. Cover and simmer on low for about 15 minutes until fluffy.
- Heat a cast iron skillet over medium-high heat. Season steak and sear in olive oil for 2–3 minutes per side until browned. Let rest.
- Blend sautéed garlic with cream or yogurt and herbs until smooth.
- Assemble bowls: layer quinoa at the bottom, top with roasted squash and seared steak. Drizzle with garlic herb sauce.
