  • 2 cups butternut squash, peeled and diced
  • 1 pound sirloin or ribeye steak, cut into cubes
  • 1 cup quinoa, rinsed
  • 3 garlic cloves, sautéed
  • 1/2 cup heavy cream or Greek yogurt
  • Fresh herbs: parsley, thyme, rosemary
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, pepper, thyme, and rosemary; roast for 25–30 minutes until tender.
  2. In a medium saucepan, boil 2 cups water; add rinsed quinoa. Cover and simmer on low for about 15 minutes until fluffy.
  3. Heat a cast iron skillet over medium-high heat. Season steak and sear in olive oil for 2–3 minutes per side until browned. Let rest.
  4. Blend sautéed garlic with cream or yogurt and herbs until smooth.
  5. Assemble bowls: layer quinoa at the bottom, top with roasted squash and seared steak. Drizzle with garlic herb sauce.
