  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup fresh baby spinach, chopped
  • 4 large tortillas
  • Olive oil for drizzling
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a mixing bowl, combine mozzarella, Parmesan, garlic, onion powder, smoked paprika, oregano, basil, salt, and pepper until well mixed.
  3. Carefully slice pockets into the chicken breasts without cutting all the way through.
  4. Stuff each pocket generously with the cheese mixture and chopped spinach.
  5. Wrap each chicken breast tightly in a tortilla and secure if needed.
  6. Place seam-side down in the baking dish, drizzle with olive oil, cover with foil, and bake for 20 minutes.
  7. Remove foil and continue baking for another 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  8. Allow to rest for a few minutes before slicing and serving.
