- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons minced garlic
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 1 cup fresh baby spinach, chopped
- 4 large tortillas
- Olive oil for drizzling
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a mixing bowl, combine mozzarella, Parmesan, garlic, onion powder, smoked paprika, oregano, basil, salt, and pepper until well mixed.
- Carefully slice pockets into the chicken breasts without cutting all the way through.
- Stuff each pocket generously with the cheese mixture and chopped spinach.
- Wrap each chicken breast tightly in a tortilla and secure if needed.
- Place seam-side down in the baking dish, drizzle with olive oil, cover with foil, and bake for 20 minutes.
- Remove foil and continue baking for another 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Allow to rest for a few minutes before slicing and serving.
