  • 10 tbsp Unsalted Butter, (melted)
  • 32 oz (1000g) Cream Cheese, (well softened)
  • 3/4 cup White Sugar
  • 1/2 cup Liquid Honey
  • 1 tbsp Vanilla
  • 3/4 tsp Kosher Salt
  • 3 Large Eggs, (at room temperature)
  • 2 Large Egg Yolks, (at room temperature)
  • 3/4 cup Heavy Cream
  • 3/4 cup Sour Cream
  • 1 tbsp Cornstarch
  • 1/2 cup Full-Fat Sour Cream
  • 1/2 cup Liquid Honey
  • 1/41/2 tsp Table Salt, (to desired saltiness)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare the crust by mixing graham cracker crumbs, sugar, and melted butter, then press into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth; gradually mix in sugar and honey. Add vanilla, salt, then incorporate eggs one at a time.
  3. Pour the filling over the crust and bake for about 90 minutes until set but slightly jiggly in the center. Cool slowly in the oven for one hour.
  4. Whip heavy cream and fold in sour cream and cornstarch; drizzle in honey to taste.
  5. After cooling, spread sour cream topping over the cheesecake and chill for at least four hours before serving.
