  • 2 eggs

  • 1/4 cup buttermilk
  • 1 teaspoon red gel food coloring
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F.
  2. In a stand mixer, cream together shortening and sugar until light and fluffy (3–5 minutes).
  3. Add eggs one at a time, mixing on medium-low speed until incorporated.
  4. Mix in vanilla, buttermilk, and red gel food coloring on low speed.
  5. In a separate bowl, whisk together flour, cocoa powder, and salt; gradually add to wet ingredients while mixing on low.
  6. Adjust dough consistency with more buttermilk if needed.
  7. Pipe rosettes onto a parchment-lined baking sheet.
  8. Bake for 6–8 minutes until slightly “wet” in appearance; cool completely on wire racks.
  9. Assemble cookie sandwiches with buttercream filling.
