  • 6 egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon red gel food coloring
  • 1/4 teaspoon salt
  • 1/3 cup fine sugar

Instructions

  1. Preheat your oven to 325°F and place six ramekins in a roasting pan.
  2. In a large bowl, whisk together egg yolks, granulated sugar, and salt until well combined.
  3. Add sifted cocoa powder and mix until smooth, then stir in red gel food coloring until evenly distributed.
  4. Heat heavy cream in a saucepan over medium heat until hot but not boiling; remove from heat.
  5. Gradually pour hot cream into the egg mixture while whisking to prevent curdling. Add vanilla extract.
  6. Strain the mixture into ramekins, fill them about 3/4 full, and prepare a water bath by adding hot water to the roasting pan halfway up the sides of the ramekins.
  7. Bake for 45–50 minutes until set but slightly jiggly in the center. Cool before refrigerating for at least 2 hours.
  8. Before serving, sprinkle fine sugar on top of each ramekin and use a kitchen torch to caramelize.
