- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- 1/8 teaspoon red gel food coloring
- 1/4 teaspoon salt
- 1/3 cup fine sugar
Instructions
- Preheat your oven to 325°F and place six ramekins in a roasting pan.
- In a large bowl, whisk together egg yolks, granulated sugar, and salt until well combined.
- Add sifted cocoa powder and mix until smooth, then stir in red gel food coloring until evenly distributed.
- Heat heavy cream in a saucepan over medium heat until hot but not boiling; remove from heat.
- Gradually pour hot cream into the egg mixture while whisking to prevent curdling. Add vanilla extract.
- Strain the mixture into ramekins, fill them about 3/4 full, and prepare a water bath by adding hot water to the roasting pan halfway up the sides of the ramekins.
- Bake for 45–50 minutes until set but slightly jiggly in the center. Cool before refrigerating for at least 2 hours.
- Before serving, sprinkle fine sugar on top of each ramekin and use a kitchen torch to caramelize.
