Ingredients
- 8–12 medium roasting potatoes
- 200 g crumbled feta cheese
- 3 tbsp capers or sliced black olives
- 2 cloves garlic, sliced
- 1 red onion, thinly sliced
- Fresh rosemary sprigs, torn
- 1 lemon, cut into quarters
- Olive oil for drizzling
- Salt and pepper to taste
Instructions
- Preheat the oven to 200C (400F) and drizzle a large skillet or roasting tray with olive oil.
- Rinse the potatoes, pierce them with a knife to release steam, then microwave in a covered bowl for 7-12 minutes until tender.
- Place the cooked potatoes in the skillet and gently smash each one.
- Drizzle with olive oil, season with salt and pepper, and add garlic, rosemary, and lemon wedges.
- Roast for about 10 minutes until golden brown.
- Sprinkle feta cheese and red onion on top; return to the oven for another 5 minutes until heated through.
- Serve hot, squeezing fresh lemon juice over the dish.
