  • 812 medium roasting potatoes
  • 200 g crumbled feta cheese
  • 3 tbsp capers or sliced black olives
  • 2 cloves garlic, sliced
  • 1 red onion, thinly sliced
  • Fresh rosemary sprigs, torn
  • 1 lemon, cut into quarters
  • Olive oil for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200C (400F) and drizzle a large skillet or roasting tray with olive oil.
  2. Rinse the potatoes, pierce them with a knife to release steam, then microwave in a covered bowl for 7-12 minutes until tender.
  3. Place the cooked potatoes in the skillet and gently smash each one.
  4. Drizzle with olive oil, season with salt and pepper, and add garlic, rosemary, and lemon wedges.
  5. Roast for about 10 minutes until golden brown.
  6. Sprinkle feta cheese and red onion on top; return to the oven for another 5 minutes until heated through.
  7. Serve hot, squeezing fresh lemon juice over the dish.
