Ingredients

- 4 kiwis
- 1/4 cup shredded coconut

- Toast the coconut in a skillet over medium-low heat for 3-5 minutes until lightly browned. Set aside.
- Cube the pineapple and slice the kiwis into bite-sized pieces. Add them to a large mixing bowl along with julienned mint leaves.
