Ingredients

Scale
  • 5 chicken thighs (skin on, bone-in)

  • 1.5 cups chicken broth
  • 0.75 cup water
  • Salt and black pepper to taste

  2. In a large skillet or Dutch oven over medium heat, sauté the diced onions in olive oil until translucent.
  3. Add uncooked rice and lightly toast it before pouring in the chicken broth and water.
  4. Layer marinated chicken thighs on top of the rice mixture and season with additional spices.
  5. Cover and simmer on low heat for about 50 minutes until the rice is tender and has absorbed all liquids.
