  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 1 1/2 cups warm water
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • 8 ounces mozzarella cheese (cut into cubes)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let sit until foamy (about 5 minutes).
  2. In another bowl, whisk together flour and salt. Gradually add to the yeast mixture until combined.
  3. Knead the dough for about 5 minutes using a stand mixer or by hand for about 8 minutes until smooth.
  4. Mix in chopped rosemary and Parmesan cheese. Shape into a ball and let rise in a greased bowl covered with a towel for about an hour.
  5. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down the dough, divide into eight pieces, flatten each piece, place mozzarella in the center, and seal.
  7. Roll each piece into pretzel shapes and boil them in baking soda water for about 30 seconds each.
  8. Brush with melted butter, sprinkle with sea salt, and bake for 12-15 minutes until golden brown.
