- 1 1/2 teaspoons salt
- 1 tablespoon sugar
- 1 1/2 cups warm water
- 1/4 cup baking soda
- 1/4 cup unsalted butter (melted)
- 1 tablespoon fresh rosemary (chopped)
- 1/2 cup grated Parmesan cheese
- 8 ounces mozzarella cheese (cut into cubes)
- Coarse sea salt (for sprinkling)
Instructions
- In a mixing bowl, combine warm water, yeast, and sugar. Let sit until foamy (about 5 minutes).
- In another bowl, whisk together flour and salt. Gradually add to the yeast mixture until combined.
- Knead the dough for about 5 minutes using a stand mixer or by hand for about 8 minutes until smooth.
- Mix in chopped rosemary and Parmesan cheese. Shape into a ball and let rise in a greased bowl covered with a towel for about an hour.
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Punch down the dough, divide into eight pieces, flatten each piece, place mozzarella in the center, and seal.
