  • 4 2/3 cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces marshmallows
  • 1 teaspoon peppermint extract
  • Green food coloring (about 10 drops)
  • 3/4 cup mini chocolate chips

Instructions

  1. Grease a large mixing bowl with butter or cooking spray.
  2. Pour Rice Krispies into the greased bowl and set aside.
  3. In a medium-large saucepan over low heat, melt the salted butter.
  4. Add marshmallows to the melted butter, stirring until coated.
  5. Continue heating until three-quarters of the marshmallows are melted; stir continuously until fully melted.
  6. Mix in peppermint extract and green food coloring until desired color is achieved.
  7. Pour melted mixture over Rice Krispies and mix until fully coated.
  8. Let cool slightly before adding mini chocolate chips (reserve some for topping).
  9. Spread mixture into a greased 8-inch pan; top with reserved chocolate chips.
  10. Allow to cool at room temperature for at least 30 minutes before cutting into squares.
