Ingredients
- 4 2/3 cups Rice Krispies Cereal
- 4 tablespoons salted butter
- 10 ounces marshmallows
- 1 teaspoon peppermint extract
- Green food coloring (about 10 drops)
- 3/4 cup mini chocolate chips
Instructions
- Grease a large mixing bowl with butter or cooking spray.
- Pour Rice Krispies into the greased bowl and set aside.
- In a medium-large saucepan over low heat, melt the salted butter.
- Add marshmallows to the melted butter, stirring until coated.
- Continue heating until three-quarters of the marshmallows are melted; stir continuously until fully melted.
- Mix in peppermint extract and green food coloring until desired color is achieved.
- Pour melted mixture over Rice Krispies and mix until fully coated.
- Let cool slightly before adding mini chocolate chips (reserve some for topping).
- Spread mixture into a greased 8-inch pan; top with reserved chocolate chips.
- Allow to cool at room temperature for at least 30 minutes before cutting into squares.
