  • 15 Maria cookies or 1 cup graham cracker crumbs
  • 4 tbsp butter (melted)
  • 8 oz cream cheese (softened)
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 tbsp lime juice
  • Zest of 1 lime
  • 1 cup heavy cream
  • 7 oz guava paste (about 3 wedges)
  • 1/4 cup water

Instructions

  1. Prepare the crust by crushing Maria cookies in a food processor and mixing with melted butter. Press firmly into muffin tin cups.
  2. In a bowl, beat softened cream cheese until smooth; add sugar, vanilla, lime juice, and zest. Mix well.
  3. Whip heavy cream to stiff peaks in a separate bowl, then fold into the cream cheese mixture.
  4. Spoon the filling over each crust and refrigerate for at least two hours until set.
  5. For the topping, melt guava paste with water in a saucepan until smooth. Cool and pour over each cheesecake before serving.
