  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Cooking spray or additional olive oil for the pan

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté minced garlic for about 30 seconds until fragrant.
  2. Add chopped spinach and cook for 2-3 minutes until wilted. Season with salt, pepper, and oregano. Remove from heat.
  3. Lay out tortillas and evenly distribute the sautéed spinach mixture on one half of each tortilla.
  4. Top with crumbled feta cheese, shredded mozzarella, and sliced red onions.
  5. Fold tortillas over to create a half-moon shape.
  6. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil. Cook the quesadillas for 2-3 minutes on each side until golden brown and cheese melts.
