  • 1 lb pasta (penne, rotini, or farfalle)
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumbers
  • 1/2 cup kalamata olives, halved
  • 3/4 cup crumbled feta cheese
  • 1/3 cup extra virgin olive oil
  • 2 tbsp red wine vinegar or lemon juice
  • Fresh herbs: parsley and basil

Instructions

  1. Cook pasta in salted boiling water until al dente; drain and rinse under cold water.
  2. Prepare vegetables: halve tomatoes, dice cucumbers, slice onion, and halve olives.
  3. In a bowl, whisk together olive oil, vinegar (or lemon juice), minced garlic, salt, and pepper.
  4. In a large mixing bowl, combine cooked pasta and prepared vegetables. Pour dressing over and toss to coat.
  5. Gently fold in feta cheese and fresh herbs.
  6. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
