Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 can (14 oz) artichoke hearts, drained and quartered
- 1/2 cup pitted green olives, halved
- 1/2 red onion, sliced
- 2 cloves garlic, minced
- Juice and zest of 1 lemon
- 1/2 cup chicken broth

Instructions

- In a large ovenproof skillet, heat olive oil over medium-high heat; sear chicken for 3-4 minutes on each side until golden brown. Remove from skillet.
- Sauté sliced onion and minced garlic in the same skillet until aromatic (about 2 minutes).
- Add artichokes and olives; cook for an additional 2 minutes.
- Pour in chicken broth, lemon juice, and zest; bring to a simmer.
- Return chicken to skillet; spoon sauce over each piece.
- Bake in preheated oven for 20-25 minutes until cooked through.
- Garnish with fresh parsley before serving.
