  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 1/2 cup pitted green olives, halved
  • 1/2 red onion, sliced
  • 2 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 1/2 cup chicken broth
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, oregano, basil, and garlic powder.
  3. In a large ovenproof skillet, heat olive oil over medium-high heat; sear chicken for 3-4 minutes on each side until golden brown. Remove from skillet.
  4. Sauté sliced onion and minced garlic in the same skillet until aromatic (about 2 minutes).
  5. Add artichokes and olives; cook for an additional 2 minutes.
  6. Pour in chicken broth, lemon juice, and zest; bring to a simmer.
  7. Return chicken to skillet; spoon sauce over each piece.
  8. Bake in preheated oven for 20-25 minutes until cooked through.
  9. Garnish with fresh parsley before serving.
