  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 can (14 oz) artichoke hearts, drained and quartered
  • 1/2 cup pitted green olives, halved
  • 1 lemon (juiced and zested)
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)
  • Salt, pepper, dried oregano, dried basil, garlic powder

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, season chicken with salt, pepper, oregano, basil, and garlic powder.
  3. Heat olive oil in an ovenproof skillet over medium-high heat and sear the chicken for 3-4 minutes on each side until golden.
  4. Remove chicken; sauté sliced red onion and minced garlic in the same skillet for about 2 minutes.
  5. Add artichokes and olives; cook for an additional 2 minutes.
  6. Pour in chicken broth, white wine (if using), lemon juice, and zest; bring to simmer.
  7. Return chicken to skillet and spoon sauce over it.
  8. Transfer skillet to the oven and bake for 20-25 minutes until chicken is cooked through.
