Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 can (14 oz) artichoke hearts, drained and quartered
- 1/2 cup pitted green olives, halved
- 1 lemon (juiced and zested)
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
- Salt, pepper, dried oregano, dried basil, garlic powder
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, season chicken with salt, pepper, oregano, basil, and garlic powder.
- Heat olive oil in an ovenproof skillet over medium-high heat and sear the chicken for 3-4 minutes on each side until golden.
- Remove chicken; sauté sliced red onion and minced garlic in the same skillet for about 2 minutes.
- Add artichokes and olives; cook for an additional 2 minutes.
- Pour in chicken broth, white wine (if using), lemon juice, and zest; bring to simmer.
- Return chicken to skillet and spoon sauce over it.
- Transfer skillet to the oven and bake for 20-25 minutes until chicken is cooked through.
