- 320 g mango pulp
- 100 g granulated sugar
- 40 g cornstarch
- 600 g vegan cream cheese (cold)
- 120 g vegan Greek-style yogurt (cold)
- ½ teaspoon vanilla extract
- 30 g powdered sugar
- 3 tablespoons wild mango balsamic
- 4 tablespoons wild mango balsamic
- 4 tablespoons mango pulp
- 4 tablespoons hot water
- 500 g vegan cookies
- 2 fresh mangoes (finely diced)
Instructions
- Prepare the cookie mixture by combining wild mango balsamic, mango pulp, and hot water. Briefly dip the vegan cookies and layer them in a serving dish.
- In a separate bowl, whisk together cold vegan cream cheese and yogurt until smooth. Add sugar, cornstarch, vanilla extract, and powdered sugar; mix until well combined.
- Spread half of the cream mixture over the cookies, add half of the diced fresh mangoes, then repeat with another layer of cookies and cream.
