  • 1 cup grated pecorino romano cheese
  • 1 cup panko breadcrumbs
  • Zest of 2 lemons
  • 2 large eggs
  • 1 cup heavy cream
  • Juice of 2 lemons
  • Garlic powder
  • Dijon mustard
  • Salt
  • Black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow dish, mix pecorino cheese, panko breadcrumbs, lemon zest, garlic powder, salt, and pepper.
  3. Whisk the eggs in another bowl. Season the chicken breasts with salt and pepper.
  4. Dip each chicken breast into the eggs then coat thoroughly in the breadcrumb mixture.
  5. Heat olive oil and butter in a large oven-safe skillet over medium-high heat. Sear each chicken breast for about 3–4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 15–20 minutes until the internal temperature reaches 165°F (75°C).
  7. Meanwhile, prepare the creamy lemon sauce by combining heavy cream, lemon juice, Dijon mustard, minced garlic, salt, and pepper in a saucepan over medium heat; simmer until slightly thickened.
