Ingredients

  • 1 pound fresh strawberries (divided into 2 cups and ¾ cup)
  • ¼ cup cane or brown sugar
  • Squeeze of lemon juice
  • 23 cups unsweetened non-dairy milk

Instructions

  1. In a bowl, macerate ¾ cup of diced strawberries with 1 tablespoon of sugar; set aside.
  2. In a saucepan, combine the remaining 2 cups of diced strawberries, 3 tablespoons of sugar, and lemon juice. Bring to boil over medium heat; simmer for about 10 minutes until syrupy.
  3. Cool the syrup in the refrigerator.
  4. In a glass, mix in 2-3 tablespoons of strawberry syrup with ¾ cup of non-dairy milk and add ice if desired. Top with macerated strawberries and stir well.
