Ingredients
- 1 1/2 lbs ground pork
- 1 large egg
- 1/2 cup seasoned panko breadcrumbs
- 4 cloves garlic, minced
- 2 tablespoons jerk seasoning
- 14 oz full-fat coconut milk
- 3 teaspoons Jamaican curry powder
Instructions
- In a large bowl, mix ground pork, egg, breadcrumbs, garlic, jerk seasoning, salt, and pepper until just combined.
- Form into approximately 20–22 meatballs and set aside.
- Heat butter and olive oil in a non-stick skillet over medium heat. Brown meatballs on all sides (about 3 minutes each) and transfer to a plate.
- Sauté shallots and garlic until soft; add bell peppers and cook until tender.
- Stir in curry powder and coconut milk; bring to a boil before reducing heat.
- Add meatballs back into the sauce and simmer for 20–25 minutes until cooked through.
