  • 1 1/2 lbs ground pork
  • 1 large egg
  • 1/2 cup seasoned panko breadcrumbs
  • 4 cloves garlic, minced
  • 2 tablespoons jerk seasoning
  • 14 oz full-fat coconut milk
  • 3 teaspoons Jamaican curry powder

Instructions

  1. In a large bowl, mix ground pork, egg, breadcrumbs, garlic, jerk seasoning, salt, and pepper until just combined.
  2. Form into approximately 20–22 meatballs and set aside.
  3. Heat butter and olive oil in a non-stick skillet over medium heat. Brown meatballs on all sides (about 3 minutes each) and transfer to a plate.
  4. Sauté shallots and garlic until soft; add bell peppers and cook until tender.
  5. Stir in curry powder and coconut milk; bring to a boil before reducing heat.
  6. Add meatballs back into the sauce and simmer for 20–25 minutes until cooked through.
