  • 1 pound boneless, skinless chicken breasts
  • 12 ounces linguine pasta
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 2 tablespoons lemon juice
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the linguine according to package directions; reserve ½ cup pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; cook for about 5-7 minutes until browned and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic, paprika, and red pepper flakes for about a minute.
  4. Stir in Dijon mustard, lemon juice, and chicken broth (or reserved pasta water). Simmer gently.
  5. Add heavy cream and half of the parsley; stir until the sauce thickens slightly.
  6. Return the chicken to the pan along with the cooked linguine and parmesan cheese; toss well to combine. Adjust sauce consistency with reserved pasta water if needed.
  7. Taste and season as required before serving hot with remaining parsley.
