Ingredients
- 454 g (1 lb) dried angel hair pasta
- 900 g (32 oz) cherry tomatoes, halved
- 18 large basil leaves, julienned
- 1½ cups (150 g) grated Parmesan cheese
- ½ cup (118 ml) extra virgin olive oil
- 6 tbsp (50 g) minced garlic
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine halved cherry tomatoes with olive oil, minced garlic, salt, black pepper, and red pepper flakes. Allow to marinate while you cook the pasta.
- Boil water in a large pot. Add salt and cook the angel hair pasta according to package instructions until al dente (about 2–4 minutes). Drain in a colander and rinse with cold water.
- In the same bowl used for marinating the tomatoes, add cooked pasta. Toss in julienned basil leaves and grated Parmesan cheese until well combined.
- Serve immediately or refrigerate for at least 30 minutes to enhance flavors.
