  • 2 tsp powdered gelatin
  • 2 tbsp cold water
  • Pink or red gel food coloring

Instructions

  1. Make raspberry purée: Cook raspberries with sugar and lemon juice over medium heat for 5-7 minutes, then strain through a fine sieve to remove seeds.
  2. Bloom gelatin: Sprinkle gelatin over cold water and let it absorb for 5 minutes.
  3. Prepare mousse: Warm the purée slightly, dissolve bloomed gelatin in it, then fold in whipped heavy cream until combined.
  4. Fill molds: Transfer mousse into heart-shaped silicone molds and freeze for at least 4 hours.
  5. Create mirror glaze: Heat sugar, condensed milk, and water until dissolved; add melted white chocolate and bloomed gelatin along with food coloring.
  6. Glaze hearts: Remove mousse from molds and pour glaze over each heart before refrigerating for an hour.
