Ingredients
- 1 Strawberry Cake Mix (15 oz)
- 1 ½ cups Guava Nectar or Guava Juice
- 3 Eggs (room temperature)
- 1/3 cup Coconut Oil (liquid)
- 10 oz Cream Cheese (room temperature)
- 1/2 cup granulated sugar
- 1 teaspoon Vanilla extract
- 8 oz Cool Whip (thawed)
- 2 ½ cups Guava Nectar for Glaze
- 1/2 cup granulated sugar
- 4 tablespoons Cornstarch
- 3 tablespoons Water
- Sweetened Coconut Flakes (optional garnish)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine strawberry cake mix, guava nectar, and eggs. Add coconut oil and mix until well blended.
- Pour batter into greased 9×13 inch pan and bake for about 25 minutes or until toothpick comes out clean. Cool completely.
- For the cream layer, beat cream cheese, sugar, and vanilla until smooth; then fold in Cool Whip.
- Spread cream mixture over cooled cake.
- For the glaze, heat guava nectar and sugar in a saucepan; thicken with cornstarch mixed with water.
- Pour glaze over cream layer and refrigerate for at least one hour before serving.
