  • 1 ½ cups Guava Nectar or Guava Juice
  • 3 Eggs (room temperature)
  • 1/3 cup Coconut Oil (liquid)
  • 10 oz Cream Cheese (room temperature)
  • 1/2 cup granulated sugar
  • 1 teaspoon Vanilla extract
  • 8 oz Cool Whip (thawed)
  • 2 ½ cups Guava Nectar for Glaze
  • 1/2 cup granulated sugar
  • 4 tablespoons Cornstarch
  • 3 tablespoons Water
  • Sweetened Coconut Flakes (optional garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine strawberry cake mix, guava nectar, and eggs. Add coconut oil and mix until well blended.
  3. Pour batter into greased 9×13 inch pan and bake for about 25 minutes or until toothpick comes out clean. Cool completely.
  4. For the cream layer, beat cream cheese, sugar, and vanilla until smooth; then fold in Cool Whip.
  5. Spread cream mixture over cooled cake.
  6. For the glaze, heat guava nectar and sugar in a saucepan; thicken with cornstarch mixed with water.
  7. Pour glaze over cream layer and refrigerate for at least one hour before serving.
