  • ¼ cup melted salted butter

  • 8 oz mochiko flour (sweet glutinous rice flour)
  • ½ teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F. Grease an 8×6-inch baking pan and line it with parchment paper.
  2. In a large bowl, whisk together eggs and sugar until frothy. Add coconut milk, melted butter, and vanilla extract; mix well.
  3. Gradually add mochiko flour and baking powder, stirring until smooth.
  4. Pour the batter into the prepared pan and bake for about 1 hour and 25 minutes or until golden brown.
  5. Allow to cool completely before lifting out of the pan using the parchment paper. Cut into squares and serve.
