  • 4 tbsp breadcrumbs
  • 1 tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 egg
  • 1 shallot (grated)
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 shallots (diced)
  • 2 garlic cloves (minced)
  • 1 tbsp yellow mustard
  • ½ tsp salt
  • 1 tsp coarsely ground black pepper
  • 1 tbsp all-purpose flour
  • ½ cup whiskey
  • ½ cup beef broth
  • 1 cup cream (20% fat or heavy cream)
  • 2 tbsp chopped chives

Instructions

  1. In a large bowl, combine ground beef, egg, breadcrumbs, salt, pepper, and grated shallot; mix gently.
  2. Shape the mixture into four patties and set aside.
  3. Heat olive oil and butter in a skillet over medium-high heat. Sear the patties for about 5 minutes on each side until browned. Remove from skillet.
  4. In the same skillet, cook diced shallots and minced garlic until fragrant.
  5. Stir in mustard, flour, and seasonings; then deglaze with whiskey while scraping up browned bits.
  6. Add beef broth and cream; return patties to the skillet to simmer for an additional 5 minutes.
