  • ½ cup red onion, diced
  • ¼ cup cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt to taste
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tbsp cilantro, chopped
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 avocado, sliced or mashed
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish

Instructions

  1. Marinate shrimp in olive oil and spices for 15–30 minutes.
  2. Mix corn salsa ingredients in a bowl and set aside.
  3. Preheat grill and cook shrimp for 2–3 minutes on each side until pink and opaque.
  4. Combine creamy garlic sauce ingredients in a small bowl.
  5. Assemble your bowl: start with corn salsa, add grilled shrimp and avocado, then drizzle with creamy garlic sauce.
