  • 1 cup plain Greek yogurt
  • 4 cloves garlic, minced
  • 2 lbs boneless, skinless chicken thighs
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons Greek-style extra virgin olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 medium cucumber, grated
  • 1/2 cup crumbled feta cheese
  • 68 warm pita bread wraps
  • 2 cups shredded lettuce
  • 2 large tomatoes, diced
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced

Instructions

  1. In a large bowl, whisk together Greek yogurt, garlic, lemon juice, olive oil, oregano, cumin, paprika, salt, and pepper.
  2. Add chicken to the marinade and coat well. Cover and refrigerate for at least 2 hours (overnight for best results).
  3. Prepare tzatziki by squeezing excess water from grated cucumber and mixing it with yogurt, garlic, lemon juice, dill, feta cheese, salt, and pepper in a medium bowl. Refrigerate until ready to serve.
  4. Preheat grill or grill pan to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes per side until cooked through.
  5. Allow chicken to rest for 5 minutes before slicing thinly.
  6. Warm pita bread wraps on the grill or in a skillet.
  7. Assemble gyros by spreading tzatziki on pita and adding sliced chicken along with your choice of toppings.
