Ingredients
- 1 cup plain Greek yogurt
- 4 cloves garlic, minced
- 2 lbs boneless, skinless chicken thighs
- 2 tablespoons fresh lemon juice
- 2 tablespoons Greek-style extra virgin olive oil
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 medium cucumber, grated
- 1/2 cup crumbled feta cheese
- 6–8 warm pita bread wraps
- 2 cups shredded lettuce
- 2 large tomatoes, diced
- 1 cucumber, sliced
- 1 red onion, thinly sliced
Instructions
- In a large bowl, whisk together Greek yogurt, garlic, lemon juice, olive oil, oregano, cumin, paprika, salt, and pepper.
- Add chicken to the marinade and coat well. Cover and refrigerate for at least 2 hours (overnight for best results).
- Prepare tzatziki by squeezing excess water from grated cucumber and mixing it with yogurt, garlic, lemon juice, dill, feta cheese, salt, and pepper in a medium bowl. Refrigerate until ready to serve.
- Preheat grill or grill pan to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes per side until cooked through.
- Allow chicken to rest for 5 minutes before slicing thinly.
- Warm pita bread wraps on the grill or in a skillet.
- Assemble gyros by spreading tzatziki on pita and adding sliced chicken along with your choice of toppings.
