- 4 cloves garlic, minced
- 2–3 tbsp olive oil or butter
- 1 lb medium shrimp, peeled and deveined
- Salt and pepper to taste
- Optional: pork cracklings (chicharrón), lime wedges, sautéed vegetables
Instructions
- Prepare the Plantains: Peel and cut plantains into 1–2 inch pieces. Boil in salted water for 10–15 minutes until tender.
- Mash the Mofongo: In a mortar and pestle, mash the boiled plantains with minced garlic, olive oil (or butter), optional chicharrón, salt, and pepper until smooth.
- Cook the Garlic Shrimp: Heat butter or olive oil in a skillet over medium heat. Sauté minced garlic until fragrant, then add shrimp seasoned with salt and pepper. Cook for about 3–4 minutes per side until the shrimp are pink and opaque.
- Assemble the Dish: Mold the mofongo on serving plates, top with garlic shrimp, and drizzle with pan juices.
