  • 2 heads garlic
  • 1 teaspoon olive oil
  • 8 ounces cream cheese, room temperature
  • 1 cup sour cream
  • 4 ounces shredded mozzarella cheese
  • ½ cup grated parmesan cheese, divided
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon fresh chopped parsley, for garnish
  • Crostini or crackers, for serving

Instructions

  1. Preheat the oven to 400℉. Slice off the tops of the garlic heads and drizzle with olive oil.
  2. Wrap the garlic in foil and roast for 50 minutes until soft. Let cool.
  3. Reduce the oven temperature to 350℉.
  4. Squeeze roasted garlic into a bowl and mash into a paste.
  5. Combine mashed garlic with cream cheese, sour cream, mozzarella, half of the parmesan, salt, and pepper.
  6. Spread mixture in a baking dish and top with remaining parmesan.
  7. Bake for 28 minutes until bubbly and golden.
  8. Garnish with parsley and serve warm with crostini or crackers.
