- 1/3 cup potato starch
- 1/2 teaspoon baking powder
- 1 teaspoon salt

- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon five spice powder
- 3/4 cup cold sparkling water (or more depending on consistency)
- Neutral oil (for deep frying)
- Salt
- Furikake
- Sweet chili sauce

Instructions
- Prepare enoki mushrooms by slicing the dirt end and cutting them into thin layers.
- Heat oil in a heavy-bottomed pot to 375°F (190°C) and line a tray with a wire rack.
- In a bowl, mix flour, potato starch, baking powder, salt, and spices. Gradually whisk in sparkling water until smooth.
- Dredge sliced mushrooms in the batter, allowing excess to drip off.
- Fry in hot oil for 1-2 minutes until golden brown. Use a spider strainer to remove and drain on the wire rack.
- Season with salt and furikake before serving with dipping sauces.
