  • red apple vinegar
  • honey (or agave)
  • sea salt
  • black pepper
  • cumin

Instructions

  1. Cook shelled edamame according to package instructions; set aside.
  2. Steam or sauté frozen corn until heated through.
  3. Chop red bell pepper, red onion, and green onion; combine with edamame and corn in a mixing bowl.
  4. In a mason jar, mix dressing ingredients (lime juice, avocado oil, vinegar, honey, salt, pepper, cumin) and shake well.
  5. Pour dressing over salad mixture and toss to coat evenly; garnish with cilantro.
