  • 2 tablespoons cornflour
  • 1 cup white sugar
  • 1/2 teaspoon vanilla
  • Seeds from a vanilla bean or 1 tablespoon vanilla bean paste
  • 1 cup whipping cream
  • 1/4 teaspoon vanilla flavoring
  • 2 tablespoons confectioners’ sugar
  • 1/2 cup softened cream cheese (4 ounces)
  • 4 ounces melted white chocolate baking squares
  • 1 cup whipping cream
  • 1 tablespoon confectioners’ sugar
  • Seeds from a vanilla bean or 1-2 teaspoons vanilla bean paste

Instructions

  1. Preheat oven to 350°F (175°C). In a food processor, blend crushed graham cracker crumbs with white sugar, egg yolk, vanilla flavoring, and melted butter until combined. Press into the bottom of a springform pan and bake for 10 minutes. Cool completely.
  2. Beat softened cream cheese and sour cream until smooth. Gradually add cornflour, white sugar, and vanilla; mix well. Stir in vanilla bean seeds.
  3. Pour cheesecake filling over the cooled crust and bake for 28 minutes until slightly jiggly in the center. Turn off oven; let it cool inside for an hour.
  4. Whip heavy cream with confectioners’ sugar until soft peaks form. Combine melted white chocolate with softened cream cheese; fold in whipped cream.
  5. Spread mousse topping over cooled cheesecake and refrigerate for at least 2 hours before serving.
