  • 2 green onions, finely chopped
  • 1 teaspoon salt
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon gochugaru (Korean red pepper flakes)
  • 1 clove garlic, minced
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Place cucumber slices in a colander and sprinkle with salt. Toss to coat evenly and let sit for 10 minutes.
  2. Rinse the cucumbers under cold water to remove excess salt and gently squeeze out moisture.
  3. Transfer the cucumbers to a mixing bowl, then add green onions, sesame oil, rice vinegar, soy sauce, sugar, gochugaru, and minced garlic. Toss until well combined.
