  • 1 tbsp Kewpie mayo
  • 1 tbsp sriracha
  • Cooking spray
  • 1 tbsp rice vinegar
  • 2 tsp white sugar
  • 1 tsp sesame oil

Instructions

  1. Cook sushi rice according to package instructions.
  2. Combine rice vinegar and sugar in a microwave-safe bowl; microwave until sugar dissolves. Mix into the cooked rice.
  3. Preheat oven to 400℉ (200℃).
  4. In a bowl, mix cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil.
  5. Cut nori sheets into squares and place them in a greased muffin tin.
  6. Fill nori cups with sushi rice and top with salmon mixture.
  7. Bake for about 15 minutes until salmon is cooked through.
