  • 1 cup uncooked white rice (long-grain or jasmine)
  • 3 cups chicken broth
  • 1 cup Alfredo sauce
  • 1 cup frozen peas and carrots (optional)
  • 1 cup shredded mozzarella cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine shredded chicken, uncooked rice, chicken broth, Alfredo sauce, garlic powder, Italian seasoning, salt, and pepper. If desired, mix in frozen peas and carrots.
  3. Transfer the mixture to a greased 9×13-inch baking dish.
  4. Cover with aluminum foil and bake for 45 minutes.
  5. Remove foil and sprinkle mozzarella cheese over the top. Add crumbled bacon if using.
  6. Bake uncovered for an additional 10–15 minutes until cheese is melted and bubbly.
  7. Garnish with fresh parsley if desired and serve hot.
