  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a blender, pulverize freeze-dried strawberries into fine powder.
  3. Cream butter, sugar, and vanilla in a mixing bowl until light and fluffy; add egg and mix well.
  4. Gradually incorporate flour, baking soda, part of the strawberry powder, and salt; fold in strawberry jam.
  5. Roll dough into one-inch balls and place on the prepared baking sheet.
  6. Bake for 8 minutes; lightly tap the tray to flatten cookies, then bake an additional 2–3 minutes until lightly golden.
  7. For icing, mix cream cheese, powdered sugar, hot milk, vanilla extract, and remaining strawberry powder until smooth; adjust consistency with more milk if needed.
  8. Frost cooled cookies by dipping or drizzling icing on top.
