  • 1 lb ground chicken
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 8 small tortillas
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1 cup shredded cabbage
  • ½ cup chopped dill pickles
  • 2 tbsp pickle brine
  • ½ cup cottage cheese
  • 1 tsp ranch seasoning
  • Juice from ½ lemon

Instructions

  1. In a bowl, mix ground chicken with garlic powder, paprika, salt, and pepper until well combined. Form into eight equal balls.
  2. Heat a skillet over medium-high heat. Place a tortilla in the skillet and sprinkle half of it with shredded cheese; place one chicken ball on top.
  3. Flatten the chicken ball gently using a spatula and cook until the cheese turns golden brown (about 2 minutes).
  4. Flip the taco to cook the chicken side for another 3-4 minutes until fully cooked and golden brown.
  5. Meanwhile, prepare the slaw by tossing shredded cabbage, chopped dill pickles, and pickle brine together.
  6. For the ranch drizzle, blend cottage cheese with ranch seasoning and lemon juice until smooth.
  7. Assemble tacos by adding some slaw on top of each before drizzling with ranch dressing. Serve immediately.
